Marc has been a chef for 25 years and is passionate about seasonal produce. He offers local specialities and dishes inspired from other regions that are traditionally served in mountain refuges. Home-cooking and quality are the key elements and Marc is ready to adapt to your dietary requirements and special requests. Come and enjoy his cuisine in this superb green and natural setting at an altitude of 870 letres. You can sit out on the terrace and take in the breath-taking view over the hills or near the fire when the snow arrives. Located at the foot of the Cantal mountains and in the heart of the Auvergne Volcanoes Regional Nature Park, you will immediately feel at home in this warm and friendly mountain refuge. The site also stages cultural events with concerts, storytelling eveings, readings, astronomy workshops, conferences, shows, exhibitions, artists in residence, etc.
Our signature dishes: Buckwheat crumble with St-Flour lentils and roasted vegetables, blanquette of organic Ferrandais veal with seasonal vegetables, stuffed cabbage, truffade (a local speciality prepared with cheese and potato), homemade pancakes known as bourriols with blue cheese sauce, Indian-style chicken curry, roasted pork chop with garden thyme.
